Spicy Salami Pan Pizzas
- 4 1/3 cups all-purpose flour
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp dry yeast
- 2 tbsp olive oil, plus more for greasing
- 1 cup tomato and oregano pizza sauce
- 5 1/4 oz cured salami, sliced
- 3 1/2 oz canned jalapenos, drained and sliced
- 2 tsp dried rosemary
- 1/2 lb mozzarella, half diced and half grated
- Place the flour, sugar, salt, and yeast in a bowl and add the oil and 1 1/2 cups lukewarm water. Knead with the dough hook of a mixer for 5 mins, adding more water if necessary. Cover and allow to rest in a warm place for 2 hours.
- Preheat the oven to 425u0b0F. Grease a 10-12 inch cast iron or other heavy-bottomed pan. Cut the dough in half and press one half into the bottom of the pan, forming a slightly raised edge. Spread with half the pizza sauce and top with half each of the salami, jalapenos, rosemary, and mozzarella.
- Cook on the stove-top, over high heat, for 2 mins, then transfer to the oven and bake for 10 mins, until the cheese is golden and bubbling. Remove from the pan and repeat with the remaining ingredients.
