Chicken, Potato And Zucchini Bake
- 1/2 lb medium potatoes
- 1 tsp olive oil
- 4.5 oz chicken breast
- 7 oz zucchini, sliced
- None Pinch freshly grated nutmeg
- 1/2 cup basil leaves
- 1.75 oz Gouda cheese, grated
- None None Freshly ground pink or black pepper
- Preheat the oven to 350u0b0F. Cook the potatoes in boiling salted water until tender. Heat the oil in a frying pan and fry the chicken for 4-5 minutes until cooked through. Transfer to a plate and slice thinly.
- Add the zucchini slices to the pan and saute for 3-4 minutes, until they start to turn golden. Slice the potatoes and arrange in a small, shallow baking dish with the zucchini and chicken.
- Sprinkle with the nutmeg and basil leaves, then the cheese and a sprinkling of pink or black pepper. Bake for 15-20 minutes until the cheese is melting and lightly browned.
