Spaghetti With Lemon, Pork And Zucchini

  1. Cook pasta according to package instructions. Drain and return to pan.
  2. Meanwhile, heat oil in a large frying pan over moderate heat. Cook and stir garlic for 2 mins or until just turning golden.
  3. Add pork and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until browned. Add zucchini and cook, stirring, for 1-2 mins or until tender.
  4. Add lemon juice and 1/4 cup water to zucchini mixture. Season to taste. Bring to a boil. Reduce heat and simmer, uncovered, for 5 mins.
  5. Add pasta and parsley; toss to combine. Spoon into bowls and top with zest and Parmesan. Serve immediately.
