Spaghetti With Lemon, Pork And Zucchini
- 11 oz spaghetti
- 2 tbsp vegetable or olive oil
- 2 cloves garlic, thinly sliced
- 1 lb ground pork
- 2 None medium zucchini, cut into thin strips
- 2 tbsp lemon juice
- 1/3 cup flat leaf parsley, chopped
- 1 tbsp lemon zest, finely grated
- 1.5 oz Parmesan, shaved, to serve
- Cook pasta according to package instructions. Drain and return to pan.
- Meanwhile, heat oil in a large frying pan over moderate heat. Cook and stir garlic for 2 mins or until just turning golden.
- Add pork and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until browned. Add zucchini and cook, stirring, for 1-2 mins or until tender.
- Add lemon juice and 1/4 cup water to zucchini mixture. Season to taste. Bring to a boil. Reduce heat and simmer, uncovered, for 5 mins.
- Add pasta and parsley; toss to combine. Spoon into bowls and top with zest and Parmesan. Serve immediately.
