Apple Pie Squares

  1. Grease a 12 x 8-inch baking pan and line the bottom and sides with parchment paper, extending the paper 2 inches over the long sides.
  2. Sift the flours into a medium bowl. Rub in the butter. Stir in the sugar, egg and enough milk (about 1/4 cup) to make a firm dough. Knead on a floured work surface until smooth. Cover and refrigerate for 30 mins.
  3. Preheat the oven to 400u0b0F. For the apple pie filling, combine the apple, sugar and 1/2 cup water in a large saucepan. Cook, uncovered, stirring occasionally, for about 10 mins or until the apple softens. Remove from the heat and stir in the raisins, spice and lemon peel. Cool.
  4. Divide the dough in half. Roll one half large enough to cover the bottom of the prepared pan. Press firmly into the pan. Spread the apple filling over the dough. Roll the remaining dough large enough to cover the filling. Place dough over the top. Brush with 1 tbsp milk and sprinkle with 1 tbsp sugar.
  5. Bake for about 25 mins. Cool in the pan on a wire rack. Cut into squares and serve with whipped cream. For extra flavor, stir ground nutmeg or cinnamon into the cream.
