Glazed Chicken With Mixed Vegetables
- 8 None chicken drumsticks
- 1/2 cup hoisin sauce
- 1 tbsp sesame seeds
- 1 lb winter squash, peeled, diced
- 7 oz green beans, trimmed
- 4 oz baby corn, cut into 3/4 inch pieces
- 1 None medium red onion, halved, thinly sliced
- 1 clove garlic, minced
- 2 tbsp soy sauce
- 3 tsp sesame oil
- 4 tbsp fresh cilantro leaves, chopped
- Combine chicken and hoisin sauce. Cover with plastic wrap and chill for 30 mins.
- Preheat oven to 350u0b0F. Line a baking tray with foil and lightly coat with oil. Arrange chicken on prepared tray, reserving marinade. Bake for 30 mins, brushing with marinade. Sprinkle with sesame seeds and bake for 10 mins, or until cooked through and sticky.
- Meanwhile, steam squash for 7 mins. Add beans and corn. Steam for 2-3 mins. Toss vegetables with onion, garlic, soy sauce, sesame oil and cilantro. Season. Transfer to serving plates and serve with chicken.
