Fish Curry With Rice
- 3/4 cup basmati rice, or any long grain rice
- 1 lb white fish fillet (such as perch, cod or haddock), cut into cubes
- 2 tbsp lemon juice
- 3 tbsp butter
- 1/2 lb mixed peppers, deseeded and cut into strips
- 2/3 cup scallions, sliced
- 1/2 cup vegetable stock
- 2 tbsp curry paste
- None None Lemon balm leaves, for garnish (can also substitute bergamot or mint)
- Cook the rice in 1 1/4 cup of boiling salted water for 20 mins. Drizzle the fish with the lemon juice and season with salt.
- Melt 1 tbsp of butter in a pan and saute the peppers for 2 mins. Add the scallions and cook for 1 more min. Season with salt and black pepper and remove from the pan.
- Pat the fish dry, and melt the remaining butter in the saucepan. Cook the fish for 2 mins. Add the stock, curry paste, peppers and scallions and simmer for 2 more mins.
- Drain the rice and arrange on plates with the fish and curry. Garnish with herbs.
