Warm Pork And Choy Sum Salad

  1. Place the pork, lime juice and ginger in a shallow dish; toss to coat the pork in the mixture. Let stand for 10 mins.
  2. For the sweet chili dressing, whisk all the ingredients in a small bowl. Set aside.
  3. Lightly spray a large skillet with no stick cooking spray. Heat on medium heat. Cook the pork for about 8 mins until browned all over. Remove from the pan; cover to keep warm.
  4. Add the choy sum to same heated pan with 2 tbsp water; cook, stirring, until the choy sum is just wilted.
  5. Meanwhile, thickly slice the pork. Place the choy sum, carrot, herbs and onion in a large bowl. Add the dressing and toss gently. Serve the pork with the salad.
