Warm Pork And Choy Sum Salad
- 1 3/4 lbs pork tenderloin
- 1/3 cup lime juice
- 1 piece (3/4 inch) fresh ginger, grated
- 1 lb choy sum or other Asian greens, coarsely chopped
- 2 medium carrots, sliced into thin ribbons
- 1/2 cup firmly packed fresh basil leaves
- 1 cup firmly packed fresh cilantro leaves
- 4 None green onions, thinly sliced

- 1 tbsp fish sauce
- 1 tbsp sweet chili sauce
- 1 tbsp lime juice
- 1 small red Thai chili pepper, finely chopped
- Place the pork, lime juice and ginger in a shallow dish; toss to coat the pork in the mixture. Let stand for 10 mins.
- For the sweet chili dressing, whisk all the ingredients in a small bowl. Set aside.
- Lightly spray a large skillet with no stick cooking spray. Heat on medium heat. Cook the pork for about 8 mins until browned all over. Remove from the pan; cover to keep warm.
- Add the choy sum to same heated pan with 2 tbsp water; cook, stirring, until the choy sum is just wilted.
- Meanwhile, thickly slice the pork. Place the choy sum, carrot, herbs and onion in a large bowl. Add the dressing and toss gently. Serve the pork with the salad.
