Fresh Apple Pound Cake
- 4 c. tart, juicy apples, peeled and diced
- 2 c. sugar
- 2 tsp. baking soda
- 1/4 tsp. nutmeg
- 1 tsp. salt
- 1 c. corn oil
- 3 c. flour
- 2 tsp. cinnamon
- 1 1/2 tsp. vanilla
- 3 eggs
- 1 c. chopped raisins
- 3/4 c. chopped walnuts or pecans
- Pour sugar over apples.
- Mix thoroughly and let stand while preparing batter.
- Sift together flour, soda, nutmeg and salt into large mixing bowl.
- Beat eggs and corn oil together.
- Add to dry ingredients and continue beating until smooth.
- Stir in vanilla, apple-sugar mixture (including juice), raisins and nuts.
- Continue stirring until evenly distributed through batter.
- If apples are not real juicy, add a little water.
- Pour batter into well-oiled tube pan.
- Bake in preheated 350u0b0 oven for 1 hour.
- If preferred, can add a glaze for topping, although it's delicious plain.
