White Chocolate Cheesecake And Mixed Berries
- 3.5 oz graham crackers
- 5 tbsp butter, melted
- 1 lb cream cheese, at room temperature
- 1/2 cup granulated sugar
- 6 oz white chocolate, melted, cooled
- 1 1/4 cups heavy cream, whipped
- 3 tsp powdered gelatin, bloomed in 1/4 cup cold water for 5 mins
- 9 oz mixed berries, to serve
- None None powdered sugar, to dust
- Process graham crackers in a food processor until fine crumbs form. Add butter and pulse until combined. Transfer to an 8 inch springform pan and press firmly into base. Chill for 15 mins, until firm.
- Meanwhile, beat cream cheese and sugar until smooth. Fold in chocolate and whipped cream. Combine 2 tbsp cream cheese mixture with bloomed gelatin and gently heat until melted. Return to cream cheese mixture and mix to combine. Pour over prepared base and smooth surface. Cover loosely with plastic wrap and chill overnight, until firm.
- Remove cheesecake from pan and top with berries. Dust with powdered sugar and serve.
