Plum And Pistachio Cake
- None None For the Plum Cake Base
- 6 1/2 tbsp butter, softened
- 1/2 cup granulated sugar
- 1 cup all-purpose flour + 2 tbsp
- 1 tsp baking powder
- 2 None eggs, beaten
- 2 tbsp milk
- 1/2 cup pistachios, chopped
- 12 None red plums, halved, pitted
- None None For the Topping
- 4 tbsp butter, melted
- 1/4 cup demerara sugar
- 1 tsp ground allspice
- 2 None eggs, beaten
- None None heavy cream, to serve
- Preheat oven to 350u0b0F. Grease and line an 8 inch springform pan with parchment paper. Grease paper with butter.
- To make the plum cake base, cream butter and sugar until light and creamy. Sift together flour, baking powder and a pinch of salt. Whisk together eggs and milk. Add flour, alternating with egg mixture until just combined. Transfer to prepared pan and smooth top. Sprinkle with pistachios and arrange plums, cut-side up, on top.
- To make the topping, combine butter, sugar and allspice. Let cool slightly then whisk in eggs. Pour over plums.
- Bake for 60-70 mins, until a skewer inserted in the center comes out clean and top is crunchy and golden. Let cool in pan for 5 mins. Serve with cream.
