Mini Pavlovas

  1. Preheat the oven to 300u0b0F. Line 2 baking sheets with parchment paper.
  2. Beat egg whites in a medium, clean bowl with an electric mixer until soft peaks form.
  3. Gradually add sugar, 1 tbsp at a time, beating until sugar dissolves and foam is stiff, thick and glossy. Beat in lemon juice and vanilla extract.
  4. Spoon mixture onto prepared pans to form 8 round nests.
  5. Bake 10 mins. Reduce oven to 250u0b0F, and bake a further 20 mins. Allow to cool in a turned-off oven, with the door ajar to fully dry out.
  6. To serve, top with whipped cream and bananas, strawberries and kiwifruit. Drizzle with passionfruit just before serving.
