Mini Pavlovas
- 4 None egg whites
- 3/4 cup sugar
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 1/4 cups heavy cream, whipped
- 3 None bananas, peeled and sliced
- 9 oz strawberries, hulled and quartered
- 2 None kiwifruit, peeled and sliced
- 4 None passionfruit, pulp only
- Preheat the oven to 300u0b0F. Line 2 baking sheets with parchment paper.
- Beat egg whites in a medium, clean bowl with an electric mixer until soft peaks form.
- Gradually add sugar, 1 tbsp at a time, beating until sugar dissolves and foam is stiff, thick and glossy. Beat in lemon juice and vanilla extract.
- Spoon mixture onto prepared pans to form 8 round nests.
- Bake 10 mins. Reduce oven to 250u0b0F, and bake a further 20 mins. Allow to cool in a turned-off oven, with the door ajar to fully dry out.
- To serve, top with whipped cream and bananas, strawberries and kiwifruit. Drizzle with passionfruit just before serving.
