Broccoli, Macaroni And Meatball Casserole
- 1 lb macaroni
- 2 tbsp olive oil
- 1/4 lb sausages, removed from the casings then formed into small meatballs
- 1 None medium onion, diced
- 2 tbsp tomato paste
- 1 - 15 oz can tomatoes
- 8 sprigs fresh thyme, leaves plucked
- 1 lb broccoli, cut into florets
- 1/3 lb Gouda cheese, grated
- Preheat oven to 400u0b0F. Cook the macaroni in boiling salted water as per the package instructions.
- Heat the oil in a large frying pan and sear the meatballs until browned on all sides then remove and drain on paper towels. Add the onion and saute then add the tomato paste and canned tomatoes. Bring to a boil, mashing the tomatoes slightly, and cook for about 15 mins. Add the thyme and season then add a pinch of sugar.
- Meanwhile, cook the broccoli in boiling salted water for about 3 mins. Drain then mix with the tomato sauce, meatballs and macaroni. Transfer to a baking dish, sprinkle with cheese and bake for about 30 mins until golden brown.
