Beef Kebabs With Pineapple And Tomato Salsa

  1. To make the salsa, roughly dice 2 of the tomatoes in a food processor or blender to a coarse puree. Quarter and deseed the rest of the tomatoes, cutting the flesh into cubes. Place the tomatoes in a bowl and mix in the pureed tomato, pineapple, green onion, chili and garlic along with 4 tablespoons of the oil. Season with salt, pepper and sugar.
  2. Cut the meat into thin strips about 4 inch x 3/4 inch. Lightly oil the skewers and thread through meat.
  3. Heat 1 tablespoon of the oil in a frying pan. Add half the skewers and sear 4-5 minutes until cooked through.
  4. Keep a few sprigs of cilantro for garnish. Chop the remaining stems and leaves and stir into the salsa. rnServe the skewers and salsa, garnished with cilantro, and slices of baguette.
