Mediterranean Veggie Fritters
- 1 cup self-rising flour
- 1/4 tsp baking soda
- 3/4 cup 2% milk
- 1 None egg, lightly beaten
- 1 (7 oz) jar chargrilled vegetables, drained, chopped
- 1 None zucchini, grated
- 2 tbsp fresh basil leaves, finely shredded
- 3.5 oz feta cheese, finely chopped
- None None baby arugula, to serve
- None None sweet chili sauce, to serve
- Sift together flour and baking soda. Gradually whisk in milk and egg until smooth. Add vegetables, zucchini, basil and feta. Season. Let rest for 15 mins.
- Heat a large, greased frying pan over medium heat. Drop tablespoonfuls of mixture into pan, leaving space between each to allow for spreading. Cook for 1-2 mins, until bubbles form on the surface. Flip and cook for 1 min. Repeat with remaining batter.
- Top fritters with arugula. Serve with sweet chili sauce.
