Sautéed Nectarines
- 12 tbsp unsalted butter
- 6 None nectarines, halved, pitted, cut into wedges
- 1 cup light brown sugar
- 2 tbsp honey
- 1/2 None lemon, juiced
- 4 None waffles, toasted
- None None ground cinnamon, to dust
- None None vanilla ice cream, to serve
- Melt 3 1/2 tbsp butter in a large frying pan. Add nectarines and cook over medium-high heat for 2 mins, until starting to caramelize. Set aside and keep warm.
- Add remaining butter, sugar and honey. Cook over low heat until sugar melts, around 4 mins. Add lemon juice and 2 tbsp cold water. Bring to a boil, stirring, then boil for 1-2 mins, until starting to caramelize. Remove from heat.
- Spoon fruit over waffles. Drizzle caramel sauce over top and sprinkle with cinnamon. Serve immediately with ice cream.
