Creamy Mushroom Gratin
- 4 None large portobello mushrooms, stems removed
- 4 oz light cream cheese
- 2 oz sliced ham, shredded
- 1 tsp onion flakes
- 2 1/2 tbsp butter
- 3/4 cup fresh breadcrumbs
- 1 clove garlic, minced
- 3 oz grated pizza cheese
- 1 oz finely grated Parmesan cheese
- 2 tbsp finely chopped fresh parsley leaves
- None None salad, to serve
- Preheat oven to 425u0b0F. Lightly grease and line a baking tray with parchment paper. Arrange mushrooms on tray.
- In a bowl, mix cream cheese, ham and onion flakes together. Divide between mushrooms.
- Melt butter in a large frying pan over medium heat. Add breadcrumbs and garlic. Saute for 3-4 mins, until crisp. Transfer to a small bowl and let cool for 10 mins. Add cheese and parsley, mixing well. Sprinkle mushrooms evenly with crumb mixture and bake for 10-15 mins, until golden brown.
- Serve with salad.
