Mojo Pork With Sweet Potato Fries

  1. Preheat oven to 475u0b0F. Mix 1 tbsp oil with cumin seeds. Rub over pork. Season.
  2. Heat 1 tbsp oil in a large frying pan over high heat. Cook pork for 2-3 mins per side, or until cumin is toasted and pork is golden. Transfer to a baking dish. Pour orange juice over pork. Arrange orange slices over top. Bake for 10-15 mins, until orange starts to caramelize and pork is cooked through.
  3. Meanwhile, heat remaining oil in a large frying pan over medium heat. Saute sweet potato wedges for 10 mins, or until golden and tender.
  4. Distribute pork and orange slices between serving plates. Drizzle pan juices over top. Garnish with cilantro. Serve with sweet potato wedges.
