Hearty Minestrone With Orzo
- 2 tbsp olive oil
- 1 lb top round beef, trimmed, cut into small cubes
- 2 None pork sausages
- 1 None onion, finely chopped
- 2 cloves garlic, minced
- 2 slices bacon, finely chopped
- 1 stalk celery, chopped
- 1 None carrot, chopped
- 1 None zucchini, chopped
- 2 (13.5 oz) cans chopped tomatoes
- 4 cups vegetable stock
- 1 (13.5 oz) can cannellini beans, rinsed, drained
- 5.25 oz cabbage, finely shredded
- 3.5 oz orzo
- 2 tbsp fresh parsley, fresh chopped
- In a large saucepan, heat 1 tbsp oil over high heat. Brown beef for 2-3 mins. Set aside. Add sausage and cook for 2-3 mins, turning, until browned. Let cool then thinly slice.
- Meanwhile, heat remaining oil and saute onion and garlic for 2-3 mins, until onion is tender. Add bacon, celery, carrot and zucchini. Cook for 4-5 mins, until tender. Return beef and sausages to pan. Add tomatoes, stock and 2 cups water. Bring to a boil, reduce heat and simmer, uncovered, for 30 mins.
- Add cannellini beans, cabbage and orzo. Simmer for 8-10 mins, or until orzo is al dente. Add chopped parsley and serve.
