Hearty Minestrone With Orzo

  1. In a large saucepan, heat 1 tbsp oil over high heat. Brown beef for 2-3 mins. Set aside. Add sausage and cook for 2-3 mins, turning, until browned. Let cool then thinly slice.
  2. Meanwhile, heat remaining oil and saute onion and garlic for 2-3 mins, until onion is tender. Add bacon, celery, carrot and zucchini. Cook for 4-5 mins, until tender. Return beef and sausages to pan. Add tomatoes, stock and 2 cups water. Bring to a boil, reduce heat and simmer, uncovered, for 30 mins.
  3. Add cannellini beans, cabbage and orzo. Simmer for 8-10 mins, or until orzo is al dente. Add chopped parsley and serve.
