Asparagus With Ham, Eggs And Garlic Breadcrumbs
- 4 None eggs
- 2 1/2 tbsp butter
- 3/4 cup coarse breadcrumbs
- 1 clove garlic, crushed
- 3 bunches asparagus (1 lb), trimmed
- 1 tbsp olive oil
- 7 oz ham, thinly sliced
- 1 bunch fresh chives, finely chopped
- To hard boil the eggs, place eggs in a saucepan and cover with water. Bring water to a boil over medium heat. Once the water reaches a boil, remove from the heat. Let eggs sit in hot water for 12 mins, drain then run under cold water. Peel and cut into quarters.
- Meanwhile, melt butter in a large frying pan, add breadcrumbs and garlic and cook over medium heat, stirring occasionally, until golden and crispy.
- Coat asparagus in oil. Cook along with ham in a frying pan over medium heat until asparagus is tender and ham is crispy. Transfer asparagus to a platter, top with eggs, ham, breadcrumbs and chives. Season and serve.
