Asparagus With Ham, Eggs And Garlic Breadcrumbs

  1. To hard boil the eggs, place eggs in a saucepan and cover with water. Bring water to a boil over medium heat. Once the water reaches a boil, remove from the heat. Let eggs sit in hot water for 12 mins, drain then run under cold water. Peel and cut into quarters.
  2. Meanwhile, melt butter in a large frying pan, add breadcrumbs and garlic and cook over medium heat, stirring occasionally, until golden and crispy.
  3. Coat asparagus in oil. Cook along with ham in a frying pan over medium heat until asparagus is tender and ham is crispy. Transfer asparagus to a platter, top with eggs, ham, breadcrumbs and chives. Season and serve.
