Spicy Malay Chicken Curry

  1. Cook potatoes in salted water until tender.
  2. Meanwhile, heat oil in a large saucepan over medium heat. Sweat onion, ginger and garlic, stirring, until onion is soft. Add chicken and cook, stirring, until browned lightly. Stir in spices, lemongrass, kaffir lime leaves and chilies. Cook, stirring, until fragrant. Add cooked potatoes, 1 cup water, tomatoes, sugar and coconut cream. Simmer for 30 mins, or until thickened slightly.
  3. Serve over steamed rice and sprinkled with peanuts.
