Kiwi Pancakes With Maple Butter
- 1 cup self-rising flour
- 2 tbsp sugar
- 1 cup milk
- 1 None egg
- 5 tbsp butter, melted
- 2 None kiwifruit, peeled and sliced
- None None FOR THE MAPLE BUTTER
- 4 tbsp (1/2 stick) butter, at room temperature, chopped
- 2 tbsp maple syrup
- Sift flour into a large bowl. Stir in sugar.
- Whisk milk, egg and 3 tbsp of the melted butter in a medium bowl until well combined. Gradually whisk into flour mixture until smooth.
- Heat a large nonstick skillet on medium heat. Brush with some of the remaining 2 tbsp melted butter.
- Spoon 1/4 cup of batter into the pan. Top each round with a slice of kiwifruit. Cook for 1-2 mins until bubbles appear on the surface, then turn to cook the other side for 1 min until golden. Transfer to a wire rack. Repeat with remaining butter, batter, kiwifruit.
- Meanwhile, for the maple butter, beat butter in a small bowl with an electric mixer until creamy. Gradually beat in syrup. Serve pancakes with maple butter.
