Barbecued Bacon-Wrapped Shrimp
- 9 slices lean smoked bacon
- 2 tsp. paprika
- 1/2 tsp. cayenne pepper
- 1/2 tsp. curry powder
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. olive oil
- 2 Tbsp. sugar
- 2 Tbsp. lemon juice
- 18 jumbo shrimp, shelled and deveined
- Cut bacon slices in half.
- In a large heavy skillet, partially cook bacon about 1 minute on each side.
- Drain on paper towel.
- In a medium bowl, stir in remaining ingredients.
- Add shrimp; toss until well coated and let marinate at room temperature for 30 to 60 minutes.
- Light a charcoal fire; remove shrimp from the marinade.
- Wrap a slice of bacon around each shrimp and secure with a toothpick.
- Toss in marinade to coat.
- Set a grill rack 5 inches from glowing coals for 5 minutes; put all the shrimp on the grill and brush on 1/2 of marinade.
- Turn and brush with the remaining marinade.
- Grill about 4 minutes on each side; serve hot or warm.
