Hot And Sour Chinese Soup
- 4 dried Chinese mushrooms (can use canned sliced mushrooms)
- 3 c. chicken broth
- 1 Tbsp. soy sauce
- 1/2 c. drained bamboo shoots, cut into strips
- 1/4 lb. lean pork, cut into strips
- 1 small cake bean curd, cut into cubes
- 2 Tbsp. lemon juice
- 1/4 tsp. white pepper
- 3 Tbsp. cold water
- 2 Tbsp. cornstarch
- 1 egg, slightly beaten
- 2 tsp. sesame oil
- 1 green onion, chopped
- Soak mushrooms in boiling water in a small bowl for 15 minutes. Drain, discard stems and slice caps.
- Combine broth, soy sauce, mushrooms, bamboo shoots and pork in medium pan. Bring to a boil.
- Lower heat and simmer 3 minutes. Add bean curd, lemon juice and pepper. Bring to a boil.
