Chicken And Broccoli Casserole
- 8.75 oz penne pasta
- 1 head broccoli, cut into florets
- 4 tbsp butter
- 2 tbsp all-purpose flour
- 1 pinch cayenne pepper
- 2 cups milk
- 10.5 oz shredded chicken
- 2 oz Cheddar cheese, grated
- 1 oz Parmesan cheese, grated
- 3 tbsp breadcrumbs
- Cook penne in boiling, salted water until al dente. Add broccoli for last 4 mins of cooking time. Drain.
- Meanwhile, melt 2 tbsp butter in a saucepan over medium heat. Add flour and cayenne and cook, stirring, for 1 min. Whisk in milk and cook, stirring, for 4 mins, or until sauce thickens and boils. Toss with penne, broccoli, chicken and Cheddar cheese. Season. Transfer to a large baking dish.
- Preheat broiler. Melt remaining butter and mix with Parmesan and breadcrumbs. Sprinkle over pasta. Broil for 2-3 mins, or until top is golden brown. Serve hot or warm.
