Chicken And Broccoli Casserole

  1. Cook penne in boiling, salted water until al dente. Add broccoli for last 4 mins of cooking time. Drain.
  2. Meanwhile, melt 2 tbsp butter in a saucepan over medium heat. Add flour and cayenne and cook, stirring, for 1 min. Whisk in milk and cook, stirring, for 4 mins, or until sauce thickens and boils. Toss with penne, broccoli, chicken and Cheddar cheese. Season. Transfer to a large baking dish.
  3. Preheat broiler. Melt remaining butter and mix with Parmesan and breadcrumbs. Sprinkle over pasta. Broil for 2-3 mins, or until top is golden brown. Serve hot or warm.
