Chocolate Cream Cushions
- 6 Tbsp. butter, softened
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 2 c. all-purpose flour
- 1 1/4 tsp. baking soda
- 1/4 tsp. salt
- 5 Tbsp. unsweetened cocoa
- 1 c. milk
- Buttercream (recipe follows)
- In large bowl of electric mixer, beat butter and sugar until creamy; beat in egg and vanilla.
- In another bowl, stir together flour, baking soda, salt, and cocoa; add to butter mixture alternately with milk, beating just until smooth.
- Drop dough by rounded teaspoonfuls onto greased baking sheets, spacing cookies about 2 inches apart.
- Bake in 400u0b0 oven for 10 minutes or until firm when lightly touched.
- Transfer to racks and let cool completely.
- Meanwhile, prepare your choice of buttercream. Spread bottoms of half the cooled cookies with buttercream; top with remaining cookies, top side up.
- Store airtight.
- Makes about 2 1/2 dozen.
