Fruity Granola Energy Bar

  1. In a large bowl, mix the dried fruit, almonds, soy flakes, pumpkin seeds, buckwheat, millet flakes and oatmeal in a large bowl and mix everything well. Add the honey, vanilla extract and egg white and mix in.
  2. Preheat the oven to 325u0b0F. Spoon the mixture onto a large baking tray lined with parchment paper. With slightly damp hands press the mixture down and spread out into a rectangle.
  3. Bake for 20-25 minutes, until it is lightly browned and pressure-resistant. Remove and while still warm, cut into 12 pieces. Store the pieces in an airtight box. Separate the pieces with a layer of parchment paper, if you need to layer them into the box.
