Jalapeno Corn Bread
- 1 lb. ground beef
- 1 large chopped onion
- 1 c. corn meal
- 3/4 tsp. salt
- 1/2 tsp. soda
- 2 c. grated Cheddar cheese
- 2 Tbsp. chopped jalapeno pepper (pickled)
- 1 can creamed corn
- 1 c. milk
- 2 eggs, beaten
- Brown ground beef and drain.
- Mix corn meal, salt and soda with creamed corn, eggs and milk.
- Put cast-iron skillet in a 350u0b0 oven with 2 tablespoons oil and 2 tablespoons corn meal sprinkled on surface.
- Heat until corn meal turns a golden brown.
- Mix chopped onion and jalapeno with corn bread mixture.
- Pour 1/2 corn bread mixture into hot skillet.
- Spread ground beef over corn bread, then Cheddar cheese on top of meat.
- Cover with remaining corn bread mixture.
- Bake at 350u0b0 for 50 minutes.
- Let set for 15 minutes before cutting.
- Enjoy!
