Chocolate Almond Macarons
- 1 1/4 cups ground almonds
- 3 None large egg whites
- 1/4 cup granulated sugar
- 1 cup powdered sugar, sifted
- 1/4 cup cocoa powder, plus 2 tsp
- 1/3 cup heavy cream
- 5 oz semi-sweet chocolate, finely chopped
- Preheat oven to 300u0b0F. Grease and line 2 baking trays with parchment paper.
- In a food processor, process ground almonds until fine then sift through a fine-mesh strainer. Set aside.
- Whip egg whites to soft peaks. Gradually add sugar, beating until dissolved. Fold in powdered sugar, 1/4 cup cocoa powder and ground almonds in 2 batches. Transfer to a piping bag and pipe 1 1/2 inch rounds, 1 1/4 inches apart, on prepared trays. Tap trays on a table so that macarons spread slightly. Let stand for 30 mins, or until dry to the touch.
- Bake macarons for 20 mins, or until macarons move without breaking when gently pushed. Let cool on trays.
- Meanwhile, for the filling, bring cream to a boil in a small saucepan. Remove from heat and add chocolate. Stir until smooth. Chill for 20 mins, or until spreadable.
- Sandwich macarons with 1 tsp chocolate filling. Dust with remaining cocoa powder to serve.
