Calamari Salad
- 10 oz cleaned squid tubes
- 2 tsp oil
- 1/4 cup lemon juice
- 2 tbsp fish sauce
- 1 tbsp each sweet chili sauce
- 1 tbsp hoisin sauce
- 1 tbsp water
- 12 None cherry tomatoes, halved
- 1 None mini cucumber, seeded, thinly sliced
- 1 None red onion, sliced
- 2 tbsp mint leaves
- 2 tbsp cilantro leaves
- 3 None green onions, sliced
- 1 tbsp lemongrass, thinly sliced
- None None radicchio leaves, to serve
- Chop and score calamari tubes. Cut into large cubes.
- Heat oil in a wok or large frying pan on high and stir-fry calamari 1 minute.
- Add lemon juice, sauces and water and cook 2 minutes, until calamari is tender. Transfer to a large bowl. Cool slightly.
- Add tomatoes, cucumber, red onion, mint leaves, cilantro leaves, green onions and lemongrass and toss to combine
- Serve salad on a bed of radicchio leaves.
