Lemon Chicken With Cauliflower

  1. Preheat oven to 375u0b0F. Season chicken inside and out then add lemon slices and 3 tbsp juice to cavity and place breast-side down in a roasting pan. Add stock and roast for 45 mins. Turn over, add spring onions, cauliflower and remaining lemon juice to pan and cook for another 30 mins. Add tomatoes and cook for 5 mins.
  2. To serve, heat hollandaise sauce in a small saucepan and add chervil. Transfer chicken and vegetables to a serving platter. Add a little pan juice to hollandaise to thin and serve with chicken. Garnish with chervil.
