Honey Pork Stir Fry
- 3 tbsp sesame oil
- 1 lb pork tenderloin, thinly sliced
- 1 None small Savoy or Napa cabbage, finely shredded
- 1/2 None small red cabbage, finely shredded
- 1 bunch spring onions, trimmed and shredded
- 1 None (1-inch) piece fresh ginger, peeled and grated
- 5 tbsp dark soy sauce
- 6 tbsp honey
- None None Noodles to serve (optional)
- Heat 1 tbsp sesame oil in a large wok or heavy based skillet. Stir-fry the pork slices for 4-5 mins until golden and cooked through. Remove from the pan using a slotted spoon. Set aside; keep warm.
- Heat the remaining oil in the wok. Stir-fry the cabbages for 6-7 mins until softened yet still slightly crunchy.
- Add the spring onions and ginger. Stir-fry for 3 mins. Remove from the pan; place in 4 warmed serving bowls; keep warm.
- Add the soy sauce and honey to the pan. Place over high heat for 2 mins. Once the mixture is boiling and the honey is frothing, add the pork. Toss to coat in the glaze for 1-2 mins. Spoon the pork and the juices on top of the cabbage stir-fry. Serve hot with noodles, if desired.
