Turkey And Swiss Burgers
- 1 lb turkey breast, chopped
- 1/2 cup fresh breadcrumbs
- 1 small red onion, finely chopped
- 2 tbsp chopped parsley
- 1 None egg, lightly beaten
- 1 clove garlic, crushed
- 1 tbsp oil
- 8 slices Swiss cheese
- 1 loaf ciabatta, split and cut into 8 pieces
- 1/2 cup cranberry sauce
- 3 oz pea shoots
- Combine the turkey, breadcrumbs, onion, parsley, egg and garlic in a large bowl. Mix well, then season to taste. Shape evenly into 8 flattened patties. Place on a tray and refrigerate until ready to cook.
- Heat the oil in a large skillet on medium heat. Cook the patties, in two batches, for 5-6 mins each batch. Turn the patties over and top each one with a cheese slice. Cook for a further 5-6 mins.
- Spread half the bread with the cranberry sauce. Top with patties, pea sprouts and remaining bread.
