Roasted Turkey Drumsticks With Vegetables

  1. Preheat the oven to 350u0b0F. For the marinade, mix 2 tbsp of the oil with the chili powder and season. Roll the turkey drumsticks in the marinade, making sure that they are coated all over. Place in a roasting pan.
  2. Roast for 1 to 1 1/4 hours. After about 30 mins of the cooking time, place the carrots and potatoes in the roasting pan, then 15 mins later add the tomatoes, cabbage and thyme, reserving some for garnish. Drizzle with the remaining olive oil and season to taste. Meanwhile, dissolve the granulated vegetable bouillon in 1/2 cup of hot water and pour into the roasting pan. Return the roasting pan to the oven for the remaining cooking time (15-30 mins). Garnish with the reserved thyme.
