Chargrilled Vegetable And Tuna Rice

  1. Preheat a large grill pan over high heat. Working in batches, char-grill vegetables for 2 mins per side, or until just soft. Transfer to a large heatproof bowl.
  2. Meanwhile, prepare rice according to package directions.
  3. Whisk together lemon zest, lemon juice, oil and garlic. Season. Add to rice along with spinach, tuna and vegetables and gently toss to combine. Season.
