Giant Oat-Peanut Cookies
- 1 1/4 c. flour
- 1 tsp. baking powder
- 1 tsp. soda
- 1/4 tsp. salt
- 2 1/4 c. oatmeal (regular or quick)
- 1 c. butter or oleo
- 1 c. peanut butter (I prefer chunky)
- 1 c. sugar
- 1 c. packed brown sugar
- 2 eggs
- 1 tsp. vanilla
- In medium bowl, combine flour, baking powder, baking soda, salt and oats.
- In large bowl with mixer at medium speed, beat margarine and peanut butter until smooth.
- Beat in sugars until blended.
- Beat in eggs and vanilla.
- Add flour mixture by hand; mix until well combined.
- Shape into 2-inch balls.
- Place 6 balls on ungreased baking sheet; flatten each to 3-inch diameter.
- Bake in 350u0b0 oven 15 to 17 minutes, until golden.
- Cool on rack.
- Store in tightly covered container.
- Makes about 24 large cookies.
