Lamb Chops With Stuffed Peppers
- 2 None red peppers
- 1 cup ricotta cheese
- 1 tbsp chopped parsley
- 1 None lemon, peel grated
- 1/4 cup grated Parmesan cheese
- 2 tbsp finely chopped walnuts
- 2 tbsp dried breadcrumbs
- 1 tbsp olive oil
- 12 None lamb chops
- Preheat the oven to 400u0b0F. Line a baking pan with parchment paper.
- Slice pepper in half lengthwise; remove seeds and membrane. Combine ricotta, parsley and lemon peel in a medium bowl. Season to taste. Spoon mixture evenly into pepper halves. Place peppers on prepared pan.
- Combine Parmesan cheese, walnuts and breadcrumbs. Sprinkle on pepper halves. Bake for 20-25 mins until cooked through and crumbs are golden.
- Meanwhile, heat olive oil in a large skillet on high heat. Cook lamb chops in batches for 2-3 mins each side, or until cooked to desired doneness. Let stand, loosely covered with foil, for 5 mins. Serve with stuffed peppers.
