Chicken Cacciatora(Pollo Alla Cacciatora)

  1. Wash and clean
  2. chicken;
  3. pat dry.
  4. Cut chicken into 20 pieces, cutting breast into 2 pieces.
  5. Heat oil in deep frying pan or Dutch oven.
  6. Saute
  7. chicken and bay leaves in oil until well browned,
  8. approximately
  9. 15
  10. minutes.
  11. Remove chicken and set aside.
  12. Add
  13. mushrooms,
  14. garlic
  15. and
  16. onion
  17. to drippings. Saute over medium
  18. heat
  19. until onion is tender.
  20. Add remaining ingredients and cook
  21. for 35 to 45 minutes, stirring occasionally. Serve with rice or
  22. a side of spaghetti.
  23. Makes 8 to 10 servings.
