Shrimp And Bok Choy Noodle Bowl
- 8 oz uncooked ramen or soba noodles, or spaghettini
- 2 tbsp vegetable oil
- 16 None uncooked large shrimp, peeled and deveined, tails intact
- 1 None onion, thinly sliced
- 2 cloves garlic, minced
- 1 None red bell pepper, seeded and sliced
- 1 medium bok choy, chopped
- 1 cup reduced-sodium vegetable broth
- Pinch None dried red chili flakes
- None None Soy sauce, for serving
- None None Fresh cilantro, for garnish
- Cook the noodles in a saucepan of boiling salted water for 4-5 mins until tender. Drain, rinse under cold water and drain again.
- Heat the oil in a large wok or deep skillet over medium-high heat. Add the shrimp and stir-fry for 3-4 mins until just cooked through. Remove to a bowl. Add the onion, garlic and bell pepper to the wok and stir-fry for 1-2 mins. Add the noodles and bok choy and stir-fry for 1-2 mins. Pour in the broth and cook for 2-3 mins.
- Return the shrimp to the wok with the chili flakes. Season with soy sauce and salt and pepper to taste. Divide the mixture among four bowls, garnish with cilantro and serve.
