Spiced Apple Pie
- 2 cups gluten-free flour
- 2 tsp xanthan gum
- 1/2 cup granulated sugar
- 14 tbsp (1 3/4 sticks) chilled unsalted butter, chopped
- 1 None egg, separated
- 6 None Granny Smith apples
- 1/2 cup raisins
- 1/2 tsp apple pie spice
- 2 tbsp demerara sugar
- None None Vanilla ice cream, to serve
- Sift flour and xanthan gum into a large bowl. Stir in 1/4 cup of the granulated sugar. Rub in butter to make coarse crumbs. Add egg yolk and 2-3 tbsp iced water, stirring to moisten lightly. Gather dough into a ball. Shape into a disc. Cover with plastic wrap and chill for 20 mins.
- Roll out half the pastry to line a 9-inch pie dish. Refrigerate until ready to fill.
- Peel, core and slice apples. Place in a large bowl. Add raisins, remaining 1/4 cup granulated sugar and apple pie spice. Toss; let stand for 10 mins, then drain off any liquid.
- Preheat the oven to 350u0b0F. Spoon apples into pie dish. Roll out remaining pastry to 10-inch round. Cut into 1/2-inch wide strips. Arrange over filling in lattice pattern. Press ends to pastry edge and trim. Brush with egg white; sprinkle with demerara sugar.
- Bake for 40-45 mins or until bubbly and golden. Serve with ice cream.
