Warm Salad With Sausage Meatballs
- 250 g macaroni
- 200 g cherry tomatoes, halved
- 300 g mushrooms
- 1 None leek, cut into semi-circular slices
- 5-6 None sausages (about 100g each), skinned
- 5-6 tbsp oil
- 1 None romaine lettuce, shredded
- 4 stalks parsley, finely chopped + reserve some leaves for garnish
- 4-5 tbsp white wine vinegar
- 50 ml vegetable stock
- 1 pinch sugar
- Boil the pasta in salted water according to the instructions on the package.
- Heat 2 tablespoons of oil in a large non-stick pan, and saute the mushrooms for about 2 mins, then add the leeks and cook for another 3 mins. Season. Drain the pasta and rinse in cold water.
- With your hands, roll the sausage meat into small, evenly sized balls. Heat a tablespoon of the oil in the pan, then fry the sausage meat balls for 4-5 mins, turning, until they are cooked through. Remove them from the pan and keep warm.
- Mix the vinegar with the vegetable stock and season, adding a little sugar. Add 2-3 tablespoons of olive oil, then mix in the pasta. Add the parsley, the leeks and mushrooms and the sausage meat balls. Finally, fold in the lettuce leave and serve with some parsley to garnish.
