Burgers With Spicy Coconut And Peanut Sauce

  1. Heat the oil in a small skillet on medium heat. Cook the lemon grass and onion, stirring, until the onion softens. Add the five-spice, red pepper flakes, fish sauce, lime peel and coconut; bring to a boil. Boil the sauce mixture, uncovered, until reduced by half. Cool for 5 mins.
  2. Combine half of the sauce with the peanut butter in a small bowl. Set aside. Combine the remaining sauce with the chicken, breadcrumbs, cilantro and egg in a large bowl. Form the chicken mixture into 4 patties.
  3. Using a vegetable peeler, slice the carrot and cucumber into thin strips.
  4. Cook the patties in a heated, lightly oiled large skillet for about 15 mins or until cooked through.
  5. Spread the peanut butter mixture on the bun tops. Sandwich the patties, carrot and cucumber between the bun halves. Serve immediately.
