Spaghetti With Mussels
- 14 oz spaghetti
- 1/4 cup olive oil
- 3 clove garlic, chopped
- 1 None red chili, sliced
- 1 cup white wine
- 2 (14 oz cans) diced tomatoes
- 1 lb mussels
- 2 tbsp chopped parsley, plus extra, to serve
- None None crusty bread, to serve
- In a large saucepan of boiling salted water, cook spaghetti following packet instructions. Drain well, set aside and keep warm.
- Meanwhile, heat oil in a large pot or pan on medium. Saute garlic and chili 1-2 minutes. Pour wine into pan and simmer 1-2 minutes. Add tomatoes and bring to a boil, stirring.
- Add mussels. Cover and cook 2-3 minutes, shaking occasionally, until mussels open.
- Add spaghetti to mussels. tossing to coat in sauce. Season to taste and stir in chopped parsley. Sprinkle with extra parsley. Serve hot with crusty bread.
