Fireball Chocolate Cupcakes

  1. Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners. Melt butter and chocolate in a bowl over a warm water bath. Remove from heat and let cool.
  2. Mix together flour, baking powder, cocoa powder, vanilla, sugar and pinch of salt. Whisk eggs with milk then mix into flour mixture until combined. Stir in melted chocolate and Oreo cream. Distribute between paper liners and bake for 30 mins. Let cool on a wire rack.
  3. Meanwhile, to make the frosting, beat mascarpone cheese, lemon juice, powdered sugar, cream cheese and white chocolate until smooth. Tint orange with food coloring. Transfer to a piping bag fitted with a large star tip and pipe onto cooled cupcakes. Break Oreo cookies into pieces then use to decorate cupcakes. Chill for 30 mins before serving.
