Bacon-Wrapped Pork Meatloaf

  1. Preheat oven to 400u0b0F. Line a baking tray with parchment paper. Arrange a wire rack on top.
  2. Combine ground pork, onion, garlic, mushrooms, herbs, eggs, breadcrumbs, chili sauce, mustard and 1/2 cup barbecue sauce. Set aside.
  3. Arrange bacon on a cutting board, overlapping slightly. Place ground pork mixture across the center then shape into a loaf and bring bacon over sides to meet. Turn over and place on wire rack. Bake for 40 mins. Brush with remaining barbecue sauce and bake for 10 mins, until firm and cooked through. Let cool for 10 mins then slice.
  4. Serve with mixed greens.
