Sticky Date Puddings With Caramel Sauce
- 1 1/3 cups pitted dates, finely chopped
- 1 tsp baking soda
- 7 tbsp butter, softened
- 3/4 cup packed brown sugar
- 2 None eggs
- 1 1/2 cups self-rising flour, sifted
- None None Whipped cream or vanilla ice cream, to serve
- None None FOR THE CARAMEL SAUCE
- 1 cup packed brown sugar
- 1 cup heavy cream
- 14 tbsp (1 3/4 sticks) unsalted butter
- Preheat the oven to 325u0b0F. Place the dates, 1 cup boiling water and baking soda in a medium bowl; stir to combine. Let stand for 5 mins.
- Beat butter and brown sugar in a large bowl with an electric mixer until pale. Add eggs, one at a time, beating well after each addition. Add flour and date mixture; beat until combined. Divide evenly among six 1-cup molds or ramekins. Place on a baking pan.
- Bake for 30 mins or until a toothpick inserted into center comes out clean.
- For the caramel sauce, place brown sugar, cream and butter in a medium saucepan on medium heat. Simmer for 5 mins, stirring. Serve puddings with whipped cream or ice cream and caramel sauce.
