Sticky Date Puddings With Caramel Sauce

  1. Preheat the oven to 325u0b0F. Place the dates, 1 cup boiling water and baking soda in a medium bowl; stir to combine. Let stand for 5 mins.
  2. Beat butter and brown sugar in a large bowl with an electric mixer until pale. Add eggs, one at a time, beating well after each addition. Add flour and date mixture; beat until combined. Divide evenly among six 1-cup molds or ramekins. Place on a baking pan.
  3. Bake for 30 mins or until a toothpick inserted into center comes out clean.
  4. For the caramel sauce, place brown sugar, cream and butter in a medium saucepan on medium heat. Simmer for 5 mins, stirring. Serve puddings with whipped cream or ice cream and caramel sauce.
