Spicy Lentil Soup

  1. Heat the oil in a saucepan and saute the onions, ginger and garlic for 2 mins. Add the lentils, curry powder, cumin and cardamom and saute for 1 min. Pour in the stock and bring to a boil. Simmer over a low heat for 15 mins, stirring frequently. Season with salt and black pepper.
  2. Ladle into bowls, top each with 1 tbsp yogurt and swirl. Sprinkle with parsley and curry powder.
