Beef And Gnocchi Bakes

  1. Preheat the oven to 425u0b0F. Heat the oil in a large saucepan on medium heat. Add the onion and garlic and cook for 3-4 mins, until soft. Add the ground beef and carrot and cook, stirring with a wooden spoon to break up any lumps, for 10 mins, until browned. Stir in the tomato puree and bring to a boil. Reduce the heat to low and simmer for 15 mins, until the sauce thickens. Stir in the chopped parsley and season to taste.
  2. Meanwhile, cook the gnocchi in a large saucepan of salted, boiling water for 3-4 mins, until the gnocchi rise to the surface. Use a slotted spoon to remove gnocchi from the boiling water and drain.
  3. Divide the meat mixture among four 1 2/3-cup baking dishes or ramekins. Top with gnocchi. Sprinkle with Parmesan cheese and nutmeg.
  4. Bake for 10-12 mins, until the gnocchi is golden and sauce is bubbling. Sprinkle with additional parsley and serve.
