Strawberry Shortcakes
- 3 cups baking mix, like Bisquick
- 2 tbsp sugar
- 3 tbsp butter
- 1/3 cup 2% milk
- 1 None large navel orange, zested and juiced
- 1 None egg, beaten with a pinch of salt
- 1 tbsp sparkling sugar
- 2 cups sliced strawberries and blueberries
- 1 1/2 cups whipped cream
- Preheat oven to 400u0b0F. Coat a baking pan with cooking spray.
- Combine baking mix, sugar and butter. Mix with pastry blender or fork until mixture resembles cornmeal. Add milk and 1/4 cup orange juice and stir until dough comes together. Transfer to a floured work surface and knead 3-4 times until dough is smooth. Pat out into a 6 inch disc and cut out 8 - 2 1/2 inch biscuits. Transfer to prepared pan, brush tops with beaten egg and sprinkle lightly with sugar. Bake for 10-12 mins, or until light golden brown. Let cool.
- Stir 1/2 tsp orange zest into whipped cream. Split biscuits then top with whipped cream and berries. Serve immediately.
