Chili Jam Beef Stir-Fry
- 4 None fresh long red chili peppers, chopped
- 1 tbsp grated fresh ginger
- 2 cloves garlic, chopped
- 1/4 cup firmly packed brown sugar
- 1 1/2 tbsp fish sauce
- 1 tbsp vegetable or peanut oil
- 1 lb beef sirloin steak, trimmed and thinly sliced
- 7 oz green beans, trimmed
- 4 None green onions, cut into 1-inch lengths
- None None Cooked long-grain white rice, to serve
- Place chili peppers, ginger, garlic, sugar and fish sauce in a food processor. Process until finely chopped. Add half the oil; process until combined. Transfer to a wok or large skillet.
- Cook and stir on medium heat for 10 mins or until chili mixture thickens and caramelizes. Transfer to a heatproof bowl. Cover to keep warm. Wipe wok clean.
- Heat wok on high heat. Add remaining oil; swirl to coat surface. Stir-fry beef, in batches, for 3 mins or until browned. Transfer to a heatproof plate.
- Add green beans to wok; stir-fry for 1 min. Add onion; stir-fry for 2 mins or until beans are just tender. Add 2 tbsp water, chili jam and beef; stir-fry for 2 mins or until combined and heated through. Serve with rice.
