Italian Turkey Meat Loaf
- 12 slices prosciutto
- 1 tbsp olive oil
- 1 None onion, finely chopped
- 2 cloves garlic, crushed
- 2 lbs ground turkey
- 1 cup fresh white breadcrumbs
- 1 cup semi-dried tomatoes, chopped
- 1/2 cup grated parmesan
- 1 None medium egg, lightly beaten
- 1/2 cup pine nuts, toasted
- 1 tbsp chopped sage
- None None salad leaves, chuntey, crusty bread, to serve
- Preheat the oven to 350u0b0F. Lightly grease two 3 x 10 inch narrow baking pans. Cover bases and sides with prosciutto, allowing it to overhang.
- Heat oil in a small frying pan on medium. Saute onion and garlic 3-4 mins, until tender. Allow to cool.
- In a large bowl, combine ground turkey with onion mixture, breadcrumbs, tomatoes, parmesan, egg, nuts and sage. Season to taste.
- Spoon mixture evenly between pans, folding prosciutto ends over. Bake 35-40 mins, until cooked through.
- Drain juices from pan and remove meat loaves. Serve sliced with salad leaves, chutney and bread.
